A lot of restaurants keep their menu limited in size to be able to offer the best quality, this is equally ensured, with the wide choice of dishes available, by the fact that each is prepared there and then. While this may take a little longer, it is well worth the wait . Another advantage is that they are quite willing to create a dish especially to your taste. No pre-packaged meals here, so we were looking forward to the experience. To start, we chose a deliciously smooth and creamy fresh goat’s cheese on a herb salad and thinly sliced apple with a honey and balsamic vinegar sauce. Equally fresh and full of flavour was a razor thin carpaccio with rucola and shavings of Parmesan cheese, topped off with a refreshing dash of lemon. The house white, a Mantel Blanco Cosecha 2004 from Rueda, accompanied these Mediterranean delicacies beautifully, balancing a floral tones with a crisp, dry finish. To accommodate our desire for something light on a warm evening, Gianni had his kitchen prepare our next dishes to taste-a flexibility that comes with cooking á la minute.

  My wife, who is not fond of heavy sauces, had her favourite in the simple pleasures of spaghetti with garlic, a mildly spicy chilli sauce and prawns. Such simple pleasures can outdo the most elaborately concocted creations provided the ingredients are first-class-in this case organic-and their preparation reflects skill and a love of food. I enjoyed a similarly light and enjoyable meal of fricassee of fish in a white wine sauce with fresh vegetables. This Sardinian speciality is certainly a winner in the summer, when it is sometimes hard to find a dish that is smooth, tasty and well-prepared yet doesn’t leave you feeling uncomfortable. The meal, like the friendly chatter of diners around us, perfectly suited a summer’s evening in Marbella, and left us looking forward to the magnificent choice of fresh delights available on the impressive dessert cart.
